Yeah, I step mash for about half of my brews. I use a Ranco controller on a Honeywell furnace control to fire the burner under my HLT and keep it at temp. I don't think stepping that would do anything but lengthen my brew day...

I have a different brand temp controller and in my settings there is a calibration option. Look up your manual.
