I used WLP005 for my pale 31 clone and it was spot on when compared to the Mission St. Pale. I also emailed Matt B and he comfirmed the strain in the Walkers Reserve is the house yeast if you want to try to culture.

The Union Jack IPA clone rocks. I entered it in the Vicbrew, the Victorian state home brew comp (Australia). This was my first time brewing this beer, and the first time for me entering the comp. I got first place for IPA and am still stoked about it.
Cheers to the CYBI crew and Firestone Walker for the recipe. This beer is now off to the nationals!

New here, but brewing for many moons. Anyway I have listened to the UJ show twice now, and there is no doubt that in the last few minutes of the show, both Jamil and Tasty talk about using WLP 007 for this beer. They say that it was their best guess, that Matt did not tell them which English Ale yeast to use. The 145-155 mash step alludes to a less attenuative strain than 007 - hence the 002 assumption. I am confused, but I am trying this beer in a couple days with 007 (Wyeast 1098). Has anyone heard directly from Jamil or Tasty about this yeast issue?

havent heard directly but can report that I used the Wyeast 1098 and it worked out great in my beer

I used WLP002 but I think you'd be happy with WLP007 as well. In either case, just be sure and raise the ferm temperature at the end.

Thank You, Tasty I brewed with 007 on 11/4/10. The aroma coming from the basement is heavenly. I have it at 65-66f, and its just about still already (I made a large starter) I guess it is time to raise the temp a few degrees to let the yeast clean up the remaining stuff. Do you think 70f is a good temp?

I'm confused about the water for the Union Jack clone.

I do use Palmer's RA Spreadsheet and have a general understanding of water chemistry, but the "Add gypsum and CaCl to 100ppm" guidance doesn't seem like enough information to me.

For my system, I'm going to need about 5.8 gallons of mash water and 3.75 gallons of sparge water.

Can you offer any guidance on how to treat this amount of RO water for this recipe?
