If anybody wants to know about what happened to the beer:

Three weeks after the astringency showed up, it changed to the horsey flavor, which is an improvement I think.

I bottled it and let it age more. A few months later, with some cooler cellaring, the horsey flavor changed to fruity, more like Orval.
