I love racking day

On racking day I always have a little beer left that didn't fit in the secondary ... good in fish batter and pizza dough, and it is already flat and room temperature.

Anyone have other uses?

I don't have that problem, but I often have beer left over at bottling. I recently ended up screwing things up by spilling my carb tabs all over the kitchen floor while bottling Imperial JBA, so drank the remaining couple quarts. That was a good early afternoon.
