Anyone else made this awesome cider-beer hybrid thing? 1 gallon of wheaty-munichy-beer in 4 gallons of cider? The guys on Homebrewtalk call it "Graff". It's killer. You get that happy-blushfaced-stupid feeling really fast.

I never made the graff, but Ed Wort's Apfelwein is pretty good.

5 gallons apple juice
2# cane sugar
1 package Montrachet wine yeast

Let sit in carboy for 6 weeks.
Transfer to keg and age for a few months.
At 12 months it's like a Sour Belgian Tripel apple cider

I've got my first keg of apfelwein on tap right now. Probably I'm going to use a different yeast, but I'm sure to make this one again. It takes 30 minutes, and helps fill a tap with a beverage for my non beer friendly friends.
