Lagering question

I am using Wyeast Bavarian 2206 on a Helles Bock that I put together on Monday. It is the first lager I have done in a while and I have a question about off flavors. I know that when lager yeasts are fermented in a warm temperature they give off some undesirable flavors and smells. My situation is the opposite. I have my primary in the brew fridge at 47 degrees. That is as warm as I can get the fridge to stay using the standard control. The fermentation appears to to extremely robust. It was a bit slow to get going, however, when it took off it threw up a nice big krausen and started. It looks like it is progressing along perfectly. What should I expect from this beer?

Depending on your grain bill, you could likely expect a Helles! :D

Seriously though, it looks like the min temp. for this yeast is 46f, with a max of 58f so you should be doing just fine. Smoooth city.

And if you think you may have any off flavors, just send me a few bottles when it's done (6 or 12) and I will identify them for you... :lol:

Hand them a coors light, tell them it's "refreshing". Its a canoe beer, they won't ever know.

I have a question about the Helles that you're making. I'm making a very similar brew using that same yeast. I know that the fermentation temp for the 2206 is supposed to be below 50, but I have one big prob. I don't have a way to cool the wort that cool. I don't have a fridge for that. I pitched on Friday and can't get back to it til Sunday. I am wondering if that will be too long at 74deg to save, or can I start cooling it with ice water and wet towels and still save it? I need to save my Munich Helles, :cry: Please HELP!!! :aaron

Wow, did I hear that right?! 74 degrees for a lager? How long did you hold that temp? Was that the ambient temp?

It's sad really. Yes, 74 deg. That's the coolest it was until today. Now i'm down to a whopping 70! The good news is that fermentation has finally started. I have to use ambient air temp to try to cool my fermenter. I'm going to wrap in a wet towel today, then put the whole set up into a yard trash bag.Then I'll add some ice water(just a little) to see if I can get it down to around high 50's or better. The prob is, it will be VERY labor intensive for me to keep it that way. I just hope that I can keep it fairly close so as not to have a big change in the temps. :roll:
