Partial mash no or...

So since my last brew I have really upgraded my equipment.

Last brew - partial boil, extract w/ steeping grains, no starter, no temp control
Now I can do full boils, I am going to make a starter and I have a fridge with a temp controller for fermentation.

I am debating on whether or not to move to the partial mash method as well. I can do my full boil in my electric turkey fryer (apartment brewing) and the mash in my old SS 6 gallon brew kettle. I now the guys always say to upgrade one thing at a time and see what that does but it's been kind of the perfect storm of craigslist postings and extra money in my bank account.

The beer I make will be decided by this. Should I brew a wit (probably my favorite style and I've already brewed a decent one to compare my upgrades) or a honey nut brown? I already have a fair amount of the wit leftover and I want to try brewing new beer styles. I'm really looking forward to brewing a honey nut brown, which I would want to do mini mash to use honey malt for flavor, but the wit is my extract w/ steeping grains alternative.

So the quandary is step up my brewing technique a bit more and go with the mini-mash Honey Nut Brown or brew a personal favorite in a Belgian Wit and see how my brewing technique and equipment has improved?

very cool on the upgrades, would love to know more about the electric turkey fryer as I am an apartment brewer as well.
I would say go with the Wit. Since it is paler you should be able to detect more diffrences than if you did the darker. Plus it is summer and a Wit will go down nice. As a matter fact it makes me thirsty just thinking about it. 8)

How big is your eletric turkey fryer? I used to use one myself, it had a 7 gal capacity and wasn't able to get a full boil really going well. Even for partial boils with 3 gals of wort it kinda sucked. Now I brew all grain, and can get away with doing full boils on the stove top.

The other thing with eletric fryers is the fact that the element is right in the wort. I had some scorching and caramelization issues with extract brews. It made it real difficult to do lighter beers.
