Sorachi Ace works really well, too. It's awesome in Brooklyn Brewery's saison.

I like to do a blend of EKG and Cascade at flameout with my saison. The hop flavors go really well with the yeast flavors.

I brewed a Octoberfest with similar intentions and was pleased how it turned out.
Everything was Octoberfest until 10 minutes left in the boil.
I loaded up on several 10 minute additions of Zythos, Cascade and Amarillo (1 oz each).
I also whirlpooled 1 minute additions of the same hops, also 1 oz each.
Then, I dry hopped with 1 oz each of Zythos, Hallertau and Amarillo for 10 days.

It turned out great with very little American grapefruit/citrus bitterness, but a shit ton of Aroma.
I'm sick of chasing my dreams. I'm just going to ask them where they're going and hook up with them later.

This is really good stuff guys. So what do you guys think about adding dried fruit peels in the WP? And what types. I am thinking of Grapefruit, Orange (sweet), lemon types. What do you guys recommend? Is this too much? and how about adding corriander & ginger to it. What can I expect if I add those adjuncts. I have never brewed a saison, that is why I have so many questions.

I'm not a big fan of lots of citrus peel in my saison, I feel it gets too close to the character of some of the wits. My most recent saison had white peppercorns and ginger added.

If you want peppery flavors, go for Grains of Paradise. That is signature to this style and Ommegon Hennepin is chock full of it.

I just brewed a SMaSH Saison and so far it is probably the best beer I have made to date. I used 12#of pilsner malt and 2oz. Of Citra at 14.5% (.5oz @ 60min, .5oz @ 10 min, and 1oz @ flameout.) then the wyeast 3711. It went from 1.066 to 1.004 in 14 days. I will say that the next variation I brew of this I am going to add a second hop to have a little more diverse flavor.
