Green Flash's New Rayon Vert (Brett/Belgian)

Green Flash has a new beer called Rayon Vert, it is french for green flash from my understanding. We it states that the beer is bottle conditioned. I bought a 4 pack the other day and it does have a lot of yeast sediment at the bottom. Anyways, I am cultivating the yeast now for a Saison that I am going to brew (added in 2ndary). The yeast has taken off in just 3 days. I plan to taste it this weekend to make sure it is the ale and brett only and not Champagne yeast.

My understanding is that beer is an all-Brett fermented ale. I do not believe any sacchromyces was used. That being said I am a huge fan of Brett and say go for it!

From what the press release said, (it's only been out 3 weeks or so) It is a ale primary fermented Belgian Pale with Brett added in the bottle. So yes, this sample might be all brett. I don't know how, well or if at all the filtering on the beer before bottling.

With that said, it would be great to try some in a year, side by side with a new batch.

Anyways, I have some more pictures of the yeast slurry on my homebrew blog. The slurry is growing great from just 2 bottles of beer (12 oz) I am going to pitch some more wort on it today and try to grow some more before pitching this (if it tastes good) on my Rye Saison after primary with Belgian Style Saison Ale Yeast Blend (White Labs #WLP568)

Today I tasted the dregs, and they are spot on with the Green Flash beer. I could drink the liquid from the flask...it is going into a fermented Saison for a quick brett kegged beer.

I consider the project done and successful. The dregs tasted great and they are now in my Rye Saison for a month or so to add a little bit of funk to it.

Any idea which Brett strain this is?
