Hey everyone, my name's Ed and I'm from San Francisco. My father got me a William's Imperial Double-Stout kit for my 21st birthday and I've been enthralled with the hobby since.

Bottling day was last Wednesday, so I'm hopeful. :mrgreen:

Are you gonna brew something else while those bottles get a little age on them? If they don't taste awesome at first don't worry! My first batch was a stout and they were great after 6 months of sitting up.

Yeah, I was gonna go down to the Farmer's Market and pick myself up some good cider to play with ('tis the season, after all) maybe get started on a few small batches of mead with some local honey...

As far as plans go for the 5 gallon fermenter, I was thinking about an IPA...but I'm not entirely sure. Anyone have a good suggestion for a beginner's second batch?

I have to pieces of advice.

1. Dont do a mead so soon. In a year youll know what you dont know yet about why its hard to get right.

2. If you ignore this... Your mead may be good in a year anyway.

I did #2. Ive never made a mead since in 5 years.
