Good Luck with your brewery, I'll be looking for your opening so I can check it out. Michigan craft beer is getting bigger and better all the time I'm sure yours will carry on the tradition. Going local is always the right way to go support MICHIGAN BEER.

Old Siberian sounds delicious. Mills, are these your recipes, like from your archives or new test batch experiments. Did you guys do local market study survey? How do you decide what beers your gonna brew?

Thanks! All of these recipes are my own. For years I strictly brewed JZ's recipes and I feel that it has given me a solid understanding of what various ingredients use. I have been brewing with wlp007 and wlp833 only for a year now and I am really starting to understand those yeasts. Also, I have been going back and listening to BN archives for style concepts as well. I am putting the finishing touches on my IPA, so I went back and listened to Vinnie, Matt B., and Nate Smith shows to try and understand their various approaches to crafting IPA's. Using those concepts and combining my own experience with hoppy beers, I put together my IPA.

As for market study I have not done anything formal. We will be the only brewery in a 45 mile radius and the craft beer scene isn't huge yet. For that reason I am focusing on a range of beer colors, with the majority of the menu being malt forward beers: helles, marzen, irish red, sweet stout, ipa, and brown ale. We will use sales as our market research I guess.
