You can also use a peltier powered Ice Probe on your conical. There is even a picture on this website of one being used on a conical. http://www.novatecproducts.com/iceprobe.htm

I have one that I was going to use on my conical but never got around to installing it.

Clearly the way to do it is with cooling jackets - that's what the pros use. Absent that it has occured to me that an attemperating coil hung from the lid would be a good way to go. In either case you obviously need a source of chilled glycol, an RTD in a thermowell to sense the temperature of the beer, a pump to circulate the glycol and a controller of some sort to turn the pump on and off.

There are some units which come with Peltier devices attached to the wall of the fermentor. If you can keep them working they should at least maintain temperature quite closely though they probably wouldn't be good at "crash" cooling.

I saw those things a while back. What is the actual probe made of? What is the pass through like? Is is plastic or SST?
The Probe looks like it's either plastic or coated in something.
I've never held one in my hands.
What?? Do you drill a hole and install it like a thermowell?
