Done. Project complete. It's a tight fit, but fits 2 3-gallon corny's. I'll have two beers travelling to my family reunion in a week.

I'll try to run a punch list of all the items if anyone is interested. Planning to move the CO2 bottle outside to hang by the handle in a bike water bottle mount.

How do you plan on keeping it cold? Pack it with ice?

Yup. I've already made more room and moved the CO2 assembly to the back and outside for serving. I plan to use ice-packs to keep it cool for transport and then fill 1/2 way with ice for serving.

Update - worked like a charm. The only hiccup was the first CO2 bottle ran out in about 4-days. I think it was still carbonating my IPA or something was leaking really slow. I had a back-up bottle and had the other refilled at a local sports store.
