Helles?

I wanna make a Helles. I just had a killer one in Atlanta and I was hoping you guys could give me some advice (John?).

I think that your recipe looks pretty good. The only thing I might change is to use less hops. I know that sounds crazy with all the hoppiness in many of todays micros, but Helles is supposed to be a light colored malty quaffing beer. But, do what you want right because it is homebrew. Use really soft water and don't be afraid to do a step at 131F for 30min if you have the capability.
