I am planning on brewing a Maibock soon. I have Wyeast 2278, but dont think this is the best yeast for the style. I had thought of trying to get a smack pack of 2308 (which is my first choice) but dont think I will be able to get it before my brew date. So, i have two options, brew it with the 2278 -OR- use a couple packs of S-05 I have here. I know its an ale yeast but was going to ferment it in the mid 50's and thought this might be an option.

So I have three choices, Wyeast 2308, Wyeast 2278 or S-05 fermented at low temps.

Any thoughts or discussions?

I think that going with the US-05 would work well, not true to style per se, but should produce a clean profile that would fit well in a maibock.

I'm not sure if you'd be able to get US-05 to stay very active at that low of a temp however. I have never fermented with it below 58F, which is still low enough to turn out very clean.

The only major difference that could cause some issues is that the dry ale yeast is probably a bit more attenuative than the lager stains, drying out the beer a bit more.

Drying out is exactly what i'm trying to stay away from. So, I guess I will wait until I get the 2308.

Another option would be the White Labs Ayinger "German Bock" strain. That's what I use to power my Maibock.
