I have some different kinds of honey leftover. Do any of you guys have a good recipe for a braggot that you would be willing to share?

I made this a few times and the neighbors went ape shit over it:
Orange Blossom Honey Hefeweizen
Malt:
4.50 lbs. Wheat Malt
3.00 lbs. Pale 2 Row
3.00 lbs. Orange Blossom Honey (added at flameout)
1.00 lbs. CaraPils or CaraFoam
0.50 lbs. Crystal 10L
Hops:
1.00 oz. Hallertauer Pellet 4.20 60 min.
1.00 oz. Hallertauer Pellet 4.20 30 min.
1.00 oz. Czech Saaz Pellet 3.60 15 min.
1.00 oz. Czech Saaz Pellet 3.60 0 min.
(Adjust your hop schedule to hit between 20-25 IBUs)
Yeast:
White Labs WLP320 American Hefeweizen Ale
Mash:
Do a 131F protein rest followed by a 152F sacc. rest.
(Note: I know a lot of guys hate the 320 Am. Hefe yeast, but the mild clove, banana and bubble gum that this yeast puts out meshes great with the orange blossom honey and makes a great tasting beer. The strong clove from the german hefe yeast overpowers the honey and in this beer, it is not quite as good).

I did a stout and 1/2 the fermentables came from the honey. It took silver in a collapsed mead/cider at Spirit of Free Beer comp here in the DC area.
I also made one with a Scottish Ale as the base beer and had it still with some oak steeped in it. that one is a sipping one during the cold months.
Basically find an ale style you like then after you ferment it, add honey and a wine yeast and let it go, or add the honey after you transfer your wort in your fermenter and ferment with either an ale or wine yeast.
What honey varietals do you have? That will help with the style of ale...

It is all wildflower honey but from three different areas and really different. One is a really dark one(1gal) with nice honey sweetness and a noticible bitterness to it. I was thinking about a dark ale with this one. Maybe a stout as was mentioned earlier or maybe a strong ale. One is amber (1/2gall)and one is pretty light 1gall.
I really liked that Dogfish "Midas Touch" I had earlier.... it seemed to have mostly pils grain and some spices to it. But something like that seemed really good for my light honey.
Thanks for the help guys, Sorry it took me so long to reply to my own thread but I have been away on business for a week.
Many Thanks,
Dave
