Evil Cousin Recipe

Got JZ to send this after the Brewing With Style Show. Can't imagine I'm the only one that wanted it.

For 37 bbl:
2300# GW pale ale malt
50# C15
100# dextrose

600 g hop extract 60 min
8.55 kg columbus 0 min
8.55 kg apollo 0 min
11.4 kg cascade 0 min

6.65 kg columbus DH#1
6.65 kg cascade DH#1
8.9 kg apollo DH#2
5 kg simcoe DH#2

OG 16.4 FG 1.4

Ferment around 69F with WLP001. Mash is 149F.

Tried this myself with wyeast 1968, and not even mashing at 145f got it done. Killer and inexpensive (relatively to other scarce hop beers) double ipa to brew. Apollo is a hop to to be reckoned with.

Sure, it's the same one above, gotten from the man himself via email. He sent the brew sheet and asked that I not post it, so I didn't. But it's the exact same recipe as previously posted. I've made it twice now, and although the fullers strain has a tough time getting down there for my system, it's such a great recipe.

Here is my attempt at conversion, using Warrior instead of the extract.

I'm going to attempt it later in January.

12 lbs Pale Malt (2 Row)
4.0 oz Crystal 15
8.0 oz Corn Sugar (Dextrose)
1.00 oz Warrior - Boil 60.0 min
2.00 oz Cascade - Boil 0.0 min
1.50 oz Apollo - Boil 0.0 min
1.50 oz Columbus - Boil 0.0 min
1st dry hop
1.25 oz Cascade
1.25 oz Columbus
2nd dry hop
1.66 oz Apollo
1.00 oz Simcoe
