Guys,

I am about to brew this. I pulled some info from the comments here and from a few other clones I found. My question is does this seem like a lot of smoked malt? The numbers work out

Batch Size: 5.50 gal
Boil Size: 7.04 gal
Color: 23.4 SRM
Bitterness: 34.1 IBUs
Est OG: 1.055 (13.5° P)
Est FG: 1.012 SG (3.1° P)
ABV: 5.6%


1.00 tbsp PH 5.2 Stabilizer (Mash 60 min)
9 lbs 8.3 oz Pale Malt (2 Row) US (2.0 SRM)
1 lbs Caramel Malt - 60L (Briess) (60.0 SRM)
12.0 oz Chocolate Malt (350.0 SRM)
8.0 oz Smoked Malt (9.0 SRM)
1.4 oz Challenger [7.5%] - Boil 60 min
1.00 tsp Irish Moss (Boil 10 min)
0.5 oz Goldings, East Kent [5.0%] - Boil 10 min
1 pkgs American Ale (Wyeast Labs #1056)

new to this ...all grain i mean but i love smoked peaty things so i added 1 lb extra to the nb kit:) its in keg seems to be good :) abv about 7.3is that too high bg was 1.066

Yes, that's a lot of smoked malt.

Your numbers:
80.9% Pale Malt
8.5% C-60
6.4% Chocolate
4.2% Smoked

Sierra Nevada's Numbers:
93.5% Pale Malt
3.5% Chocolate
2.5% C-40
.5% Smoked

Their numbers dont work out with gravity, color ibu etc.

You're not brewing on their system either. Efficiency, utilization, carmelization, etc are all going to be different (maybe even different color/hop calculation formulas). Tweak it, but I'd stay a lot closer to their numbers than trying to rewrite it. That much smoke won't put you in the same ball park as Tumbler.

Thanks guys. I was more concerned with just using that much smoked as opposed to hitting their numbers. The author of the recipe I posted and subsequent replies seem to indicate good results. I have just never used that much smoked malt in any beer.


When I throw their numbers in Beersmith all the numbers line up except color. Its WAAAAY low. Like 16.1 SRM. IBUs, Gravity ABV etc all work out though.

16.1 isn't that far off from looking at an SRM chart & remembering what it looked like the last time I had it. Did you try changing the color formula? Do they even report their SRM? If you're judging from the little color swatch on your monitor, your monitor settings could easily be off (the vast majority of people's monitors are).
