 Post subject: Brewing a beer for my buddies wedding... Suggestions?

I am still pretty new at brewing, this is only my third batch, but the first two turned out way better than expected. I still want to stick with partial mash/extract since I dont have the equip for full grain.

Two stipulations

- The wedding is Sept 19th, so it needs to be ready to drink by then
- I want a beer that somewhat summery (wedding is on the beach), but something that most people will enjoy.

I was maybe thinking of a nice wheat beer? Maybe with Honey? I tried a Honey Wheat once at Founders and LOVED it.

Maybe a Belgian Pale Ale?

Any suggestions?

You can't go wrong with an American wheat beer for people with some nice citrus and earthy hops in it. Even blonde ales are easy and crowd pleasing. Depends how much flavor you want to turn people on to. A witbier is a fantastic beer to serve at a wedding as well.

wheats and wits turn around quickly, 2 weeks, the wheat extracts come in different ratios of wheat to pils, so there is some ability to get it the way you want, low hops so it's cheap to make, just make sure you go with the liquid yeast and ferment cool, 62ish if possible, they turn out great. good luck!

I am probably going to go the wheat route, and maybe do a batch of blonde with some fruit in the secondary for the chicas there

Any suggestions on how to get a nice honey flavor into the beer? Yes I know adding how but how much? And when?

You can do a nice saison with wyeast 3711. That ferments fast and thoroughly and deliciously. Even bottle conditioned it should be ready and matured in 6-8 weeks.

Honey itself does not impart a honey flavor to the beer, but rather just dries it out more, as the yeast eat up all the sugar.

You will want to steep some Honey Malt in it to get some honey-ish sweetness. I've used it in a blonde I've made to give it a nice sweet flavor.
