Does anyone have a recipe for a Oktoberfest using ale yeast?
I was thinking of using the Oktoberfest recipe in Brewing Classic Sytles and use the WLP029 (German ale/Kolsch).
Thanks

I did the same thing last year and it turned out great. Ferment around 60° if you can. Alternatively, you can use a lager yeast at 60° and it will turn out great too. I've been playing around with that this summer.

I've had beers that were fermented with WLP001 and 1056 in the mid 50s that were very lager-like.

I did one this weekend using Wyeast 1007 German Ale. Just found an O-fest recipe I liked and changed the yeast. Fermented it as cold as I could get it. Stayed just below 60.

I was listening to an older (i think) session where Sully mentioned brewing a quick beer with 001 and called it an Oktoberfest. I listen to so many sessions at one time that I can't recall the episode, but I believe that it went over well.
If you follow an Oktoberfest recipe and keep the 001 around 65, you should be pretty close.
