Need a Cherry Wheat

In an effort to get my girlfriend to appreciate my beer passion, I promised to make a beer for her. So I told her I would make a Cherry Wheat, and we could call it Erin's Cherry. Excellent.

Only problem is I can't find a Cherry Wheat recipe that is either all grain or all extract. Everything I have come across calls for a mini-mash, and I'm not sure how to do one really. My 10 gallon mash tun seems excessive.

I did find a recipe for a Raspberry Wheat. Should the fruit adjunct be comprable? If so I should just be able to exchange cherries for raspberries, right? I don't see why not... thoughts?

Just take a basic wheat and throw 5 or 6lbs cherrys in it. I like to add my friut to secondary.

5 or 6 pounds of cherries in secondary also gets my vote. Be sure you freeze and thaw the cherries first to break down the cell walls for maximum just extraction.

I have added fruit to cider with much success. But, not so much with beer. Probably because I'm a lot more critical of how my beer tastes. I now avoid adding fruit and instead add fruit extract. This allows me to dial in the desired intensity of the flavor. Is it cheating? Probably. But, it works for me. Have fun experimenting...

I use 10lbs of cherries in the secondary for about 2 weeks. Turns the beer a nice red color and has a great cherry flavor. Even the non- beer drinking wife will drink a couple. I hope I'm stating the obvious but you need a bucket for the secondary not a carboy. Had some from a Yahoo forum email me once asking how I get the cherries out of the carboy.
