My mom buys water in 15 liter water jugs and I was wondering what you guys might think of using these for fermentation? We go through 1-2 per week and thus I wouldn't even have to clean them after use, just put them in the recycling bin and use a new one for the next batch.

Is it glass or plastic?
I use 20 liter plastic water jugs since I started. I know glass or stainless steel is better and I want to move to that, but I don´t have the $$$ yet...

They are plastic.
Another issue I just realised is that my rubber stopper wont fill the hole, any ideas on what I could do there?

Most brew shops sell stoppers to fit all sizes of bottles, if still not big enough, you can always just use some sanitized Alum foil or plastic wrap with a blow off tube.
My brew store sells up to a #13 which measures Top 2 11/16" bottom 2 5/16". That should fit a big bottle.

you could either buy a bigger stopper or
put a piece of cottonball rolled up in gaze dipped in sanitary solution....

You could also just sanitize some aluminum foil and cover the top loosely.
