I've had good luck with 1/2" copper. CPVC also works just as good.

Any reason to use one over the other?

One's shiny. And we all know shiny equipment makes better beer.

CPVC is a lot cheaper than copper. And the burrs from the saw cuts (assuming you use a hacksaw instead of drilling holes) are easier to remove from the plastic.

What about PVC glue? Should it be used to join any connections?

Glue is not needed. Everything will fit together pretty tight. When you go to clean up after the mash, you can just pull it apart to clean it up really easy.

Remember use cpvc and not pvc. Pvc is not rated for hot water.
