I have a "Brutus Clone". My kettel temp gauge is dead center. I would mount that lower next time. But it reads a few deg cooler than my Love Temp Control. But the way I see it it all works its way past the temp probe. and I give it a stir from time to time. (I have no trouble with HSA). After 60 or so batches I have never had trouble hitting my numbers.

I do like the Idea of the temp probe reaching into the mash deeper into the mash like Lee posted. I would give that a try but if it's not broke.....

Here's how I did mine... Direct-fired tun with two thermometers. As I recirculate, the lower thermometer monitors the temp of the wort under the false bottom. As I apply heat, I'll watch this one jump up and adjust the flame or pump to make sure it doesn't get too hot under the false bottom. The "main" thermometer will slowly begin to creep up as the recirc continues... I remove the heat and both thermometers will equalize after a minute or two. It's fun to watch!

edit: You can see I set it up kind of like lee mentioned in his original post (both thermometers have a 6" probe) but don't have my valve going down... went off to the right instead. Oh, and I recirc pretty much the entire mash so the wort is constantly flowing past the temp probe and out through the ball valve.
