In reference to some comments made by JP and others on the Holgate Nut Brown episode. Hominy is whole kernel corn (treated in mild Lye) and is a base good in Pozole, and less common in Menudo. It has a unique cereal flavor without much sweet-corn brightness. I have never brewed with Hominy, but imagine the flavor likely did come from the residual flavors from the toasted macadamia nuts after the nut oils have been dispensed with by yeast.
