I like SCOOBY better, especially because it's a visible colony, seems kind of like a pet. We need to come up with an extra O in the acronym.

Hello,

I stumbled upon here and thought I'd share my limited experience.

I recently started brewing kombucha from store bought, raw beverage. I am using an oolong and raw vegan cane sugar. So far, at day 5, I see many bubbles emerging and a thin layer of film beginning to form.

It's really amazing how many folks report their ease of brewing. I think I may have started something that will last a lifetime... :D

Currently, I can't stop smelling the brew. Mmm...

Tried it from the health store once....just once. It was just too accidic for me. Kind of like drinking slightly fizzy vinegar. Ended up throwing out 3/4 of the bottle.

Also, Esslenser - Isn't cane sugar already vegan?

If you thing that is too acidic - then stay away from Cantillon.

I like Cantillion and other sours...in fact have a bottle of the 2004 Iris in the fridge right now. Maybe I just got a bad bottle, but it tasted pretty much like strait vinegar.

used to grow tha stuff in HAWAII. It has to be good for you cuz it taste God Awful! YUK! 8)
