BCS JZ FRUH

I'm going to brew an AG 10 gallon batch of JZ's Kolsch from BCS on Monday. I am planning on using US-05 dry yeast as this is a bit of a last minute decision and I won't have time to get a starter together. I just wanted to check with others who have brewed this recipe and see if anyone had any tips/comments or suggestions.

Last time I brewed a Kolsch, I did 5 gallons with a Kolsch yeast and 5 gallons with S-05 and called it a Blonde ale. Both were tasty, but the S-05 wasn't a true Kolsch.

It will be a nice, tasty beer but the flavor profile will not match that of a Kolsch.
Don't let that stop you. Nothing like a beautiful blonde that goes down easy.

Ferment on the cool side and give it a month of lagering time. OR, you could throw in more hops and make it a blonde ale instead. I live in Atlanta too! I've got a bunch of Citra in my freezer if you want some.

OK! Here's my current plan of attack/action: While I was at work today my lovely wife was kind enough to do some grocery shopping for me. She went to LHBS and picked up malt and hops for me. I asked her to get 1 smackpack of Wyeast Kolsch yeast which she did. The problem is that the production date is May 14, 2013. So right now I am making a starter for said smackpack and my plan is to split the starter between 2 carboys and add a package of Safale US-05 to both carboys. I know this is far from ideal, but it is the best I can do on limited time(and budget). It makes sense to me. Does anyone know of a reason why this wouldn't work?

Who sold you that old dead yeast?(I have an idea of who it might be) Did the package swell at all?
