I did this in a here last year. Just bought the dried, unsweetened shredded coconut from the grocery store. Pretty sure it was a 12 oz bag. Toasted it all in a thin layer in the oven around 250-300 for 15 mins, flipped it for another 10 or so. I just went until the edges were toasted. I also vented the oven to let any humidity out.

I then put a 1/3 in at flame out and put the rest in secondary in a hop bag for a week. It turned out great! I just had to drink it quick, the hefe was short lived.

My buddy makes an awesome sweet stout with chocolate, coconut, coffee. Last time he brewed it he added Olive Nation coconut extract to taste in the keg. Believe it or not, the beer was excellent and I could not tell that it was an extract that he used. Olive nation products are pricey but very real tasting and smelling. Just thought I'd throw that out there for you!
