Just gathering thoughts on doing your mash and wort collecting at night and then doing the boil and pitching the morning after.

It's doable, but don't be surprised if you get a bit of a volunteer ferment going overnight (Lacto, etc). The boil will kill things off, but you might get a hint (or more than a hint possibly) of sour flavor.

+1 Spiderwrangler, less desirable things might take off growing and add some different characters to your beer, of course the boil will kill the bugs. If you brew a lot, or are just adventurous, try it!!! And more importantly, report your results. If you mash at recommended temps all the enzymatic action should be done at the end of 60 minute mash (maybe even earlier). Bringing the wort up to 180 deg F would denature the enzymes for sure, maybe even kill off some of the lacto bacillus. Maybe a short boil, then let it sit until the next morning?

thats what i was kinda thinking to do a short boil for like 15 min or something to kill off any nasties and then let it sit for 6 hours or so and get up early. im just going to try it since my work schedule is all wacky and i dont always get to brew on weekends anymore

I would brew extract before taking a chance on infection or off-flavor. I'd hate to have two weeks invested in a batch of beer, only to have to throw it out...

I've done this once because I ran out if time doing a parti-gyle. I always have frozen water bottles in the freezer, so I threw them in to cool it quickly and then put it in my extra fridge for the night. Boiled it first thing in that a.m.

worked out just fine.

Yeah I would make sure you mash it out and bringing to 180 is the best idea, if you have to do it, it will probably be fine but personally I wouldn't risk it not worth the risk to me, I would just go buy some craft beer or do an extract batch
