I understand your valid concerns about particulates in the beer. Swallowed quite a few of them sampling others brewers beer. I am a hard core filteraholic. Even stouts. I rack into cornys (with tubes trimmed off 1 inch) which remain lagering undisturbed until filtering 4 weeks later. Real coarse pads. Hazy not muddy with good mouthfeel not thin. My SS filter was made in the 1980's, 2 stage if needed and can easily take pressure to 30 psi. I don't grind to flour to avoid mashing and filtering problems. I'm brewing Sunday or Monday depending on the weather. Got to get my rhizomes in the ground.
Just checked the Weyermann malt analysis sheet sheet and they say to keep it 5% or less. So I will.
