low FG + harsh bitterness

Ok, I checked my second AG attempt yesterday. OMG, the FG is friggin' 1.003-1.004. I'm thinking my thermometer is messed up, or I didn't wait long enough to let the temperature settle during my mash? Also, the bitterness seems harsh on this beer + my last beer (both AG). I don't think it'd be a tannin problem (at least on the second batch, which I used 5.2 on).

Sounds like a mash temp. issue. I've done this as well. It's still beer!

What was your hop schedule like? The harsh bitterness should mellow out with some aging.
