I know of a professional micro brewery here that runs the wort into a fermentor allows it to sit over night then runs it off into a second fermentor and pitches. However I suspect they chill it with a heat exchanger prior to sitting over night.


Primary: Prototype IPA, Chilka IPA, Berhampore Best Bitter
Secondary: Merchant of the Devil Imperial Stout
On the Handpump: OSB ordinary bitter
