I love honey malt. I use 1lb per 5 gallon batch in all of my wheats. Actually its usually less than 1 pound because I eat a bunch of it!

Vienna. It is really a base grain.

Has a wonderful rich malty flavou and the aroma when you crush it is awesome.

I second the Munich. It's great in APAs and IPAs. I just love it. The true speciality grain I use most is Crystal 40 or 60, use it i most evry brew I make.
