one week in the bucket. Just took a sample. Down to 1.012 @ 68°. My apa is now coming out to be 6.4% ABV. BeerAlchemy had me finishing at more like 1.014.

And realized my end result is closer to 4 gal. :( Not the end of the world. I transferred from the boil pot to bucket by lifting and pouring and tried not to pour in the bottom of the kettle... either boiled off more than I thought or left more in the kettle than I should have (thinking it's more the boil off though)

Hoping the 38 IBU will be enough now that it's finishing at 6.4% (if not more... it's only been in for a week). I just tasted the sample and it seems to have some bitterness/bite.

Going to toss in an an once of amarillo leaf hops for dry hop I think. It's not part of the recipe, but I would like to add a bit more hop aroma

Capping at night kinda sucks... but had to get the pale ale off the dry hops and yeast. Soaked the bottles in OxyClean Free for a day then ran through the dishwasher when I got home from work. Waiting for the bottles to cool stinks. I normally do the washer overnight and cap on a weekend day, but dammit, life got in the way this past weekend.

Finished out at 1.011. First all-grain brew is in bottles for a few weeks to carbonate and condition (probably need a month? conditioning times change at all going from extract to grain?). 6.2% abv, approx 38 IBU, but final gravity sample tasted a little more bitter that the ibu suggests. Color of all-grain noticeable lighter (and correct) compared to extract brews. Will be nice to stop having everything coming out darker than I want.
