Start counting from pitching. There is activity before you are able to notice it.


This is how I understand fermentations too. That pretty much once liquid yeast are pitched they start going to town actively building up sterols to make their cell walls more pliable for budding during fermentation. But that doesn't mean that some of them aren't also already fermenting the wort and/or producing esters and phenolics to boot.
