Dry Yeast/Bacteria for Sour Beers

Thu Aug 13, 2015 10:54 pm

I've recently moved overseas to Sicily and before I left the states I was starting to get into brewing sour beers. Unfortunately now I need to order dry yeast compared to the fresh Whitelabs yeast I got in San Diego. I've tried searching the internet for yeast manufacturers that produce either a dry Brett strain or lacto/pedio. I would gladly take a blend of the three if there is a manufacturer out there. Any help or suggestions would be appreciated. My best bet may be to start pulling dreggs.

Unfortunately, AFAIK, there are no commercial dry products for brett or bacteria (although I hear that brett freeze-dries quite well). Your best bet, as you mentioned, is to get some bottles of sour beers and pitch those dregs into a small amount of starter wort and keep it maintained for further pitching (or making starters with).

This is an option for you:

It's the only dried "bug" company I've heard about. I haven't used the products personally, but I've heard good things.

I've used ultimate flora RTS women's health probiotics with great success for lacto souring. They have 7 different strains of lacto in each pill, just open the caps up and pour it in, I used 8 caps per batch

You could also used bottle dregs for the Brett, or you could try a small scale open fermentation. Once the wort gets inoculated and rolling with the spontaneous ferment you can top crop the actively fermenting yeast and build a normal starter up with it. I have done this with success as well

Once the wort gets inoculated and rolling with the spontaneous ferment you can top crop the actively fermenting yeast and build a normal starter up with it. At one time, all beers were sour to some degree. As pure yeast cultures were not available, the starter used from one batch to another generally contained some wild yeast and bacteria.

Blackman is who i was about to post about as well. I haven't used their products but heard about them on The Experimental Brewing podcast. Seems like a super cool idea and very little downside in giving it a try.
