After you reach your terminal gravity and the yeast is done fermenting sugars does the yeast continue to produce CO2 when cleaning up "byproducts" produced during fermentation?

Pretty much no. They give it off when turning sugar into alcohol. There isn't any sugar left so that's why they are cleaning up the "leftovers".

Remember that this takes some time, and since there is no visible airlock action or anything to go off of, you should just give it time to do its thing.

What BD said. CO2 & alcohol are produced at the same time... as a result of the yeast eating the sugars. Same reason why no more alcohol will be produced after that point.

Just don't tell that to the kid in the gas station by campus that carries a nice selection of beers. His 'beer geek' boss told him if he cellared a 9% bottle for a year or so, it'd be 12% when he drank it. :?
