Post Ferm Cooling Rate

Fri Sep 12, 2014 7:53 pm

Hey howdy!

I heard Jamil say that cooling a lager after fermentation at the slow rate of 2f per day can potentially reduce ester production by 30%.

Is there an optimal rate for cooling an ale post fermentation? Can it be done too fast?

Thanks BN

Most ale yeast stop working their mojo much higher in the temp range than lager yeast. Below 60, they're snoozing. I cold crash post fermentation as fast as my fridge will do it, with no ill effects.
