I made a Brett cider. I like it. There was a little s02, other wise dry and clean. apple flavor and aroma was nice. Brett primary @ 59f slow rise to 70f.
FYI. If you don't want Brett funk use it in primary fermentation.
I'm doing a sour mead now....
