Oyster Recipes anyone?

Hey guys and gals out there, Ive got a decent amount of oysters that need to be used up within the next few days. Anybody got a favorite recipe for me? Oyster and beer combined recipes will be even more appreciated. Just to let you know I have already downed about half of them raw so ive gotta think of something else other than fried, chowder or raw.

When I lived in Seattle, I made this oyster stew at the Maple leaf Grill.
2 T butter
1 cup chopped celery
T minced shallot
t minced garlic
8 oz artichoke hearts
4 oz tasso ham
3 oz spinach
24 oz oysters (we used hama hama)
About a qt. of half and half
Pinch of cayenne
S & P
Saute the celery, shallot, and garlic in the butter. Then add the rest of the ingredients, one at a time.
Be sure to add the oysters last. When the edges begin to curl, its done.
Be sure to use tasso ham, too. It really makes the dish.
Oh, have a beer with it, for optimal flavor.

Could try subbing oysters in for the mussels in a Belgian beer steamed mussel recipe? Butter and garlic and thyme in a pot, bivalves go in, add wit or tripel, creme fraiche and mustard, pepper... get it to where it's steaming, mix in some fresh herbs if you want, cook til they're opened, plate and cover in cooking liquid.

Even simpler would be to throw them on the grill till they open, shuck and eat.

I've never tried it with oysters, but it's great with mussels.

But really, it's hard to beat them raw.

Ive eaten so many of them raw. God they are good just a drop of habenero hot sauce or a tiny bit of cocktail. They were pre-shucked. but very fresh, bought them at the farm while they were harvesting, sorting, and shucking. I just want to use them all while still very fresh

Next time I will be getting some in the shell so i can do them up on the grill.
