Here's the rundown of the night's amazingness. Thanks to Paxton and Dave Walker for putting on one of the most (if not the single most) ridiculous meals of my life.

Image
Course 1: Smoked lamb and goat belly breakfast patty infused with Walker Reserve topped with Pale 31 cured salmon eggs. + Parsnip and root vegetable hash browns with yellow tomato Pale 31 "ketchup"

Paired with Pale 31

Image
Second Course: Union barrel smoked sea scallops + Double Barrel Ale demi-glace, celery root puree.

Paired with Double Barrel Ale

Image
Course 2.5: Some kind of awesome specialty "recessive gene" oyster topped with a sorbet made from Union Jack IPA.

Image
Course three: Island Ceviche; Rock fish, red onion, papaya, mango, yellow bell pepper & toasted hemp seeds, marinated in Union Jack. Finished with a fried plantain chip, Jamaican spiced rim glass & Union Jack beer foam.

Paired with: Nectar Hemp Ale

Image
Fourth Course: House-made python & pork sausage infused with African spices and Union Jack IPA. Roasted Washington apple Yukon gold mash potato + fig, pear and date Abacus compote.

Paired with: Union Jack

Image
Fifth Course: Pastrami spiced lamb cheeks slow cooked in Hemp Ale. Rye caraway bread pudding infused with duck eggs, Hemp Ale, and stuffed with gruyere cheese. Tho thousand island sauce made with Sonoma duck tongues.

Paired with: Red Nectar

Image
Sixth Course: A Velvet Merkin root vegetable stew served under a marinated and grilled buffalo hanger steak. Puff pastry triangle injected with 'whipped' Peruvian purple potatoes.

Paired with: Velvet Merkin

Image
Seventh Course: Cypress Groves' "Humboldt Fog" & "Midnight Moon" cheese, "Purple Haze" stuffed dried figs wrapped in pancetta, Duck chicharrones tossed in a Belgian 5-Spice, Hazelnut stuffed dates.

Paired with: Nectar IPA and Solace

This man is nuts

Image
Pre-dessert dessert: I'm not even entirely sure what this was, I just know it was a "mistake" that he made something else out of. It was an extra not on the menu, so I have no info for it. It was awesome though.

Image
Dessert: Parabola roca with hazelnuts and Theo fair trade dark chocolate, cracked over an Abacus chocolate mousse tart. Served with Velvet Merkin ice cream.

Paired with: Abacus, Parabola '10, and XIII

Too many beers at the end! We couldn't keep up.

A happy table

I've said for quite a while now that my next big conquest in the beer world would be to attend a Paxton dinner and I've been thinking that a certain event that will be held next June in San Diego would be my opportunity.

Unfortunately I'm not a very adventurous eater and after seeing some of the things on the menu of the subject beer dinner, I don't think I'd enjoy it at all.

The things that creep me out are:

lamb
goat belly
salmon eggs
python (really, python?...really?)
lamb cheek
duck eggs
duck tongues (???)
duck chicharrones

There were enough other things on the menu that would fill me up, but I don't think I could do it.

grrrr...

stop being a pussy and just try the stuff! Twinsbro (fellow BNer) sat across from me and is not an adventurous eater at all. Turns out the lamb+goat belly sausage and salmon eggs was his favorite. The python sausage was absolutely incredible, and is something I wish I could have more often.

Things like that really aren't as bizarre as they sound. Just try it

It was a phenomenal night and the BN was strong. Sean made a point to seek out the fellow soldiers. Great guy that made time for all
If you ever get the chance it is well worth the coin.

Nice pics Evan and good to meet you as well.
