1 cup(ish) finlely chopped vidallia onion 8oz Fresh Beef Marrow 4 c beef stock (Homemade would be better) 12 oz DogFish Head Santo Palo Marron 4-6 sprigs fresh thyme
sautee onion until almost crispy add marrow, chopped (if you can shop it, otherwise just add it) add stock, reduce by half. add beer reduce by half again add black pepper to taste puree with stick blender
