Anyone making their own salami?

I just picked up a meat grinder and sausage stuffer. I plan to make my own fresh sausages. They seem pretty easy. After I figure out the basics, I want to make my own salami.

My boss does, he just brought me in this pepperoni that's been hanging for the last 4 months. He makes some great stuff. He did salami a while back and it was excellent!

+ Eleventy on the Kutas book!!!!! Try his bratwurst recipe for Oktoberfest. Substitute boneless, skinless chicken thighs for the veal. It's wonderful!

I've made fresh but not cured sausage. I have some cure so I can try but haven't yet. I'm waiting till I can get my cold smoker working.
Hey Tom, you want to compare sausages sometime? Yeah I know the jokes are easy with this hobby.

Made a nice pancetta out of Keller's Charcuterie a few years ago. Came out great.
