Some pics from my new UDS (ugly drum smoker) last night.

Fatty and moink balls

The fatty was stuffed with cheddar and cream cheese and onions.

Well it had onions, cheddar and cream cheese inside of sausage. :wink:

Put a dry rub I made on the outside. Was the best fatty I've made yet.

A big loaf of sausage meat, either removed from the casing, or you can buy it loose (that sounded... awkward :unicornrainbow:

Loose meat? Are you talking about JP?

Fatties are awesome. The simplest form of fatty is to take a lb of sausage and put a dry rub on it and smoke it. I've seen them made with lots of things inside them. Start by flattening your meat on a hard surface. Then stuff your meat with something you like. Then roll it up like a fatty and seal the ends.
