Robust Porter

I just brewed a robust porter that has stopped at 1.024. I used a WLP002, made a 1000ml starter for each 6.5 gal carboy. fermented it @ 68. My target gravity was a 1.056 fortunatly or unfortunatly? my efficiency has gone way up because I'm using rice hulls and I hit a 1.070. With the WLP002 I'm woried that this strain yeast couldn't handle that alcohol content.
Any thoughts?
Should I pitch WLP001 to finish it off?

Welcome to the madhouse. Are you part of Brewlab SF?

002 should be able to handle that amount of alcohol and ferment out a bit more than you experienced. Next time it might help to warm up the fermentation a bit after the initial 48 hours. That starter also seems a bit small. I brewed my last 6 gal batch with 002 and remember using 1.2 L (stir plate) for a 1.050 beer. If you're not agitating the starter, it should be quite a bit larger.

Thx, Maxwell. No I'm not a part of the Brewlab SF, I'm in Encinitas which is just north of san diego. I haven't heard of the Brewlab in SF.

I used a stir plate, I'm now using 1500ml. up from the 1000. I've been listing a lot to brew stong and CYBI and Tasty made that suggestion. This recipe is my first porter and just wish it was a bit dryier. Hmm.

Any thoughts on how to bring down about 10 points?

warm it up and shake it up and see if it starts again. you can also pull out enough to float your hydrometer and do a forced fermentation and see if it will drop. take a reading, add way for yeast than you would let it go a day or 2 then take another reading. that should tell you how low it will go. good luck, Drew :jnj
