NASHVILLE BREW

Hi,

i just posted my stuff without introducing myself: I'm a Scientist and Anatomist by training, work at a big University in Nashville and love beer!
I' m still kind of a novice at the brewing but have made under good mentorship some pretty nice brews, righteous american real ale was the best so far but i have just bottled Marzen Oktoberfest and am fighting temptation to add more sugar to my newly racked Kolsch.

Q: if my FG is not how i want it, actually it's in the range and I noticed after the fact that the OG was not in the range, watered down I think.... can I add sugar to increase alcohol content?

Welcome Dave. When not factored in the original recipe, trying to up the alcahol in a batch due to lower than expected OG by adding simple sugar to the fermenter will likely thin out the body and flavor more than desired. Kolsch should be dry, but you still want to be able to taste the beer. If it was an all grain batch, what temp did you mash at? Unless it was higher than planned, I would probably just leave it as a lower gravity beer. :)

Yep. like scotchpine said, I would let it ride, learn from the "mistake", brew it again, and enjoy the quest for the perfect beer!
