Ray Daniels show Questions

Hey BNer's,

It appears that Ray Daniels only has about 20 minutes to spend wtih us on this Sunday's program. I would like to run that in the best possible way to get listener questions answered. So:

1. Please post your questions for Ray in this thread prior to Sunday.
2. The Brewcasters will pick out as many questions as we think can be answered in the short time.

The discussion, in general, will be about designing great beers. So Doc will hold a discussion after Ray finishes in order to keep teaching us how to design recipes and where to find resources. Questions not answered by Ray, or not picked, can be asked afterward to the Good Doctor.

I would like to know if he agrees with Jamil that it is better to tweak your nipples than rack to secondary.

What does Ray think is the most important thing about designing an extract recipe given our access to different types of LME, etc.?

If this question is too broad, howabout "what ingredient should extract brewers stay away from?"

Ok a real question...
In your book Designing Great Beers you state that 4 of 7 homebrewers of the year (during the time period stated) used malt extract and a significant amount of the top winners used it extensively, how has this changed in the time since you published the book? Also do you like Justin's nipples?

I would like to know if Ray is planning a new edition of Designing Great Beers. It would be nice if we had an updated version with the latest stats on what award winning brewers are using.

If he is not plannig a new version, what trends has he noticed taking place in homebrewing since Designing Great Beers was published?

I would like to know if Ray is palnning another book that incorprates more styles, like belgians and the like


oh yea and how important is the wetness factor, im getting 3.56932 right now but i beleve i can get it wetter
