Here it is, definitely a great beer and I love using the Bock yeast for all my lagers. Although I did recently use the 2782 Wyeast Staro Prague from their private collection 0ct-Dec and thought it was off the charts!! Hope to get it again, it's a good one.

Keys to this recipe are pitching cold at 45F raising to 50 and hold 5-7days, then ramp up to mid 60's and hold for a week. I cold crash to 34F for a couple days then filter. Give this one a good amount of 02 and this beer is rocking!!

how do you get 12 gallons to 45F?

if you split them into two 6.5 gallon carboys and put them in a 45F fridge, how long would it take to actually get the liquid to 45F?

It takes about a day for a 5 gallon carboy to go from 70F to 40F in my refrigerator. I'm curious how fast the 12 gallon B3 conical that Chad got from JZ would take to do the same thing. Anyone out use one of these for making lagers

Recirculate ice water though a whirlpool immersion chiller after first cooling with tap water.

My fridge will only pull it down 3-4°F per hour.

I have a 18.1 cu ft chest freezer, I too run an ice bath through immersion chiller then through the Therminator to get the temp down below 60F. The chest freezer gets cold quick and i usually try to fill it up when I brew lagers, can fit 6 carboys at a time. I use a Ranco with a thermowell placed in a jug of water for temp of liquid. I usually pitch at 45F within a couple hours.

In a split decision to brew one day, I decided to brew this batch with some dry 34/70 I had on hand. Its been sitting pretty long, warm at 70F. I pitched at 48, fermented at 50 for the first couple days, raised a degree each day, until 60. I held at 60 for a three or four days, then just let it rise to 70. I rehydrated the dry yeast, but could only get it within 10 degrees of my wort temp. I've been trying to get rid of a slight doughy, yeasty smell...but letting it sit for any longer will risk oxidation. ( I'm using a bucket) I think I'm just going to keg it, and deal with it.

Anybody else brew this beer before?

Hey Shat, I brewed this helles and helles yeah, it's uber tasty. I'll try to bring a couple bottles to NHC to see how you think it compares.
