Before you dump that "failed" sour or wild ale...

Fri Feb 21, 2014 9:12 am

Let it sit a while and keep tasting it. I started a Berliner early last year, late last year it tasted very harsh, like rubbing alcohol. I didnt have the heart to dump it. Ive been avoiding eye contact with that glass carboy for 5 months...I decided today was the day, but one last taste...Its good!!!!
I dont have much to offer on this site, but for newbies like me trying to brew these beers that take time...dont rush to dumping them based on off flavors early or in the middle of the ferm process. Thanks to all that have helped me with this beer...BREWINHARD :jnj
Gonna give Three Gods Brewing's RR Supplication clone an attempt next...

Glad to hear this one worked out for you. Learning from each other is the greatest benefit of homebrewing (besides the beer of course). I can't begin to tell you the wealth of information I have gained from all of the brewers on this site.

cheers to making better beer!

Is that the same thing as a "hooch maker"?

I just got back the essence from 3 cases of stuff I didn't want any more... half a case of 9 month old IPA, a meh Belgian, and an under attenuated pale. Much more pleasant to drink now.
