The yeast is Safbrew S-33. Ok I'll check again in couple days. I think I can taste "thinner body" you talking about.
The recipe was boxed Red Ale with some additions.
Basically
7 lbs Pale Malt Extract
1 lb Aromatic malt
1 lb Victory malt
1/2 lb Extra Dark Crystal
1/2 lb Crystal 30L
1 oz E. Kent Golding
1 oz Galena
1 oz Saaz

final gravity 1.018
bottled 17 days after fermentation began

Yep. I'm afraid that not all the sugar fermented. I'll wait a bit more and see how next bottle comes out. It tasted pretty good but ... Hmm .. Unfinished maybe ? Idk that's the only way I can describe it :)

Most beers, even the ones that are best fresh, still need some time to mellow. That unfinished flavor you're talking about is usually referred to as 'young' or 'green' beer. Give it a little more time in the bottle and the flavors will settle down.

That could be the whole 'patience' thing we talked about.... :P Hopefully it did fully ferment and you just happened to get a quick carbonation and aren't going to be running into bottle bomb issues.

I know. I also have two 12 oz that have bottoms of my fermenter. Probably 1/4 of yeast in there. I kept it in fridge for 24 hrs and now in cool, dark place. I'm planning on aging those for a month, just to see what happen. Also I only put half a cup of priming sugar as I only had 4.5 gallons of beer to bottle.
